A few weeks ago my friend Jo and I were drooling when Tastespotting was asking a question about Tater Tot casserole. For those in Southern California, you know we are being drenched by rain and the temperatures are nice and cold. To be clear, I am not complaining, instead I am taking a moment to celebrate the winter weather by baking this awesome looking casserole. I substituted lean Turkey for the beef and used low calorie/fat/sodium Cream of Chicken and Mushroom soup so that I can endulge and shave off a little guilt.
